Lattes are totally my weakness.With layers of coffee and vanilla- flavoured ice cream separated by crunchy ground Oreo cookies, this Vanilla Latte Ice Cream Cake is a decadent treat.I started to drink them in University when I had papers to write and needed a pick-me-up. Aaaaand then I ended up getting hooked. I started drinking vanilla lattes, but nowadays because I am weirdly healthy, I just drink them plain (as I post a seriously decadent cake recipe.  Ha!). Lattes are my favourite coffee shop treat.

So when I went to make an ice cream cake it was not surprising that I gravitated to these flavours. Coffee and vanilla go amazingly well together! What WAS surprising was that I made this for my son’s first birthday.

A little bit sophisticated for a one year old’s birthday? Perhaps.

But this is my kid we’re talking about. The little dude looooooved it and cue the meltdown when I tried to stop feeding it to him. I was super happy with how it turned out since it was a little risky- I had never made it before and was trying it for the birthday party to which 20 people were coming to!  But ice cream cake on a hot summer’s day is always a winner.

Super easy to assemble, and yes, you most definitely could go out and purchase coffee and vanilla ice cream rather than make it, but making your own ice cream is really fun and its so rich and decadent. Vanilla Latte Ice Cream Cake

  • 4 eggs, divided
  • 1.5 cups sugar, divided
  • 4 cups whipping cream, divided
  • 2 cups homo milk, divided
  • 2 tbsp. instant coffee
  • 2 vanilla beans, split and pods removed
  • 1 package Oreo cookies (approx. 26 cookies)
Instructions
  1. In the bowl of a stand mixer with a whisk attachment, whip the eggs on medium until fluffy, light yellow and forms ribbons, about 2 minutes. Slowly add in ¾ cup of sugar and mix thoroughly. Add 2 cups whipping cream and 1 cup homo milk cream and the instant coffee. Mix thoroughly.
  2. Pour into the ice cream maker and churn according to the manufacturers directions.
  3. Meanwhile, line the bottom of a nine inch spring form pan with a piece of parchment or wax paper. Place the package of Oreos in the bowl of a food processor and grind until powder. Place ½ of the Oreos in the bottom of the spring form pan. Layer the coffee ice cream over the Oreos and place in freezer until solid, about 2 hours.
  4. Meanwhile, in the bowl of a stand mixer with a whisk attachment, whip the eggs on medium until fluffy, light yellow and forms ribbons. Slowly add in ¾ cup of sugar and mix thoroughly. Add 2 cups whipping cream and 1 cup homo milk and the vanilla bean pods. Mix thoroughly.
  5. Pour into the ice cream maker and churn according to the manufacturers directions.
  6. Remove the cake from the freezer. Layer the remaining Oreo cookie crumbs and the vanilla ice cream. Place back in freezer until solid, about 2 hours.
  7. Sprinkle with cocoa powder, serve
